It is the most original and traditional version of the Prosecco. Vinification is carried out without added sulphites and it becomes “frizzante”, slightly sparkling, for natural fermentation and it is “col fondo”, on the lees, with the deposit represented by the natural yeasts of the wine, that give a fragrant bread crust aroma. Organic and biodynamic principles in the vineyard, hand made harvest, no manipulations in the winery, native yeasts and no filtration are the methods used to craft this wine.

Tasting Characteristics: creamy foam, light straw yellow color, intense bread crust aroma, harmonious taste, fresh, dry and with a medium body.
Food Matching: ideal as an aperitif, throughout the meal and in any occasion, that requires a toast. When it is served it can be decanted to separate the “fondo”, which means the deposit, and appreciate its clearness or it can be served with the “fondo” to appreciate more its aroma.

How is the wine made?

About the winery

The De Stefani family originates in Refrontolo, a little hilly village in Veneto Italy. As results in official documents of 1624. In the second half of 1800 Valeriano De Stefani, the founder, individualized the best soil where to produce wines of rare indigenous territorial personality “thanks to the Caranto soil”, as is the Colvendrame estate in Refrontolo, on the hills between Conegliano and Valdobbiadene, north of Venice, a UNESCO World Heritage site.

Today Alessandro De Stefani “ fourth generation” follows his father Tiziano in producing wines that follows a very natural philosophy of sustainability by maintaining and preserving the growth of old healthy vines, planted by choice in very high-density vineyards, without the use of chemicals or animal products, and using only indigenous yeasts without additional sulphites in the process of making their wines, turning native varieties into a better expression of themselves.
