Chardonnay Low Histamines is a certified ‘Low Histamines Wine’ – containing less than 0.5mg/litre Histamines. Created by the winery Peri Bigogno in collaboration with Sebastiano Ramello specifically for those who are sensitive to Histamines.

The wine is made from 100% Chardonnay grape. Intense and persistent on the nose, the wine reminds of fresh harvested fruit, pineapple and apricot. On the palate this Chardonnay is savoury, structured and persistent with a pleasant mineral aftertaste and a hint of vanilla.

The first fermentation is in French oak barrels where the wine also spends 6 months afterwards. This wine is the first Low Histamine wine that passes part of the vinification process in oak.

How is the wine made?

Harvest of the grapes at perfect ripeness, soft pressing and start of alcoholic fermentation at a controlled temperature. Once halfway through fermentation, transfer of half of the mass into 500-litre French oak barrels where part of the Chardonnay finishes fermentation. This mass remains in the oak barrels for 6 months, a period during which the batonnage operation is regularly carried out on the one hand to give volume and aromatic part to the wine and on the other to exploit the action of the noble lees still present in the barrel to protect the wine from oxidation, thus reducing the quantity of sulphites used. 6 months after the harvest, assembly of this part of the mass refined in oak with the other part that has continued its refinement in steel. Bottling and refinement in glass at least 3 months before the wine is put on sale.

About the winery

The history of Peri Bigogno winery goes back to 1946 when Graziella and Adriano Peri moved to Castenedolo and purchased Palazzo Togni.
The vineyards that already surrounded the Palace and the historic underground cellar convinced Adriano to continue the tradition of viticulture and wine production.
Already from the early years, the white and red wines produced on the hill by the Peri family began to gain appreciation.

Since 2008, with the entry of Adriano’s son, Andrea, started a new phase for the winery with entering 3 continents in just a few years.

In 2012, the inauguration of the new and modern winemaking area and the entry of his wife Francesca marked a solid foundation on which to continue to grow for the winery, now led by the third generation.

In 2021 the winery started making wines following Low Histamine protocol with the level of histamine not higher than 0.5mg per litre. Current range includes a white Chardonnay (slightly ages in oak), Rosato from the local grape Marzemino and Red from the same local grape Marzemino.
