Dario Coos Schioppettino 2022
Schiopettino by Dario Coos winery in Friuli is an intense dark purple-red wine, medium tannic and very elegant to the taste. With ageing, the aromatic characteristics of the wine evolve towards mature prune and liquorice.
Serving suggestions: red meats, grilled meats, game and cheese with medium ageing. The wine ages 11 months in French oak barriques.
How is the wine made?
The grapes are destemmed and crushed. Fermentation occurs with selected indigenous yeasts which allow a slow alcoholic fermentation and a cold maceration that gives the wine its aromatic characteristics. Maceration takes place in stainless steel tanks in about 2-3 weeks pumping the juce frequently over the cap. At the end of maceration, which usually goes on until alcoholic fermentation is completed, the wine is placed in small french oak barrels where malolactic fermentation occurs. Ageing: 11 months in french oak barriques.
About the winery
The Coos family has been making wine on the hilly slopes at Ramandolo since the early 19th century. In other words, five generations of Coos devoted their time to the fruits of this land. Today the winery is run by a group of friends with a passion for wine and knowledge of what needs to be done to achieve excellent results.
The winery’s philosophy is to demonstrate what is meant by tradition and traditional techniques in the quest for the original, authentic Ramandolo, combining new production methods and traditional approach.
The winery has a wonderful selection of traditional wines typical for Friuli: the white Verduzzo, Ribolla Gialla, Pinot Grigio, Sauvignon and Malvasia; and red Schiopettino, Refosco and Pignolo. And of course Ramandolo in two interpretations – as late harvest and as delicious sweet wine Picolit.
