San Salvatore Calpazio Greco Paestum 2022
San Salvatore’s ‘Calpazio’ Greco is a dry white wine coming from Mount Calpazio area of Cannito in Paestum. Here at an altitude between 150-210 meters above sea level, with a beautiful sunny exposure facing south, southwest, a special biological greek is born.
Calpazio is bright straw yellow colour with golden nuances on appearance. The nose is powerful, immediately expressing strong hints of yellow fruit, peach, pineapple, apricot, notes of ginger and turmeric; complex bouquet of field flowers, broom, acacia, linden.
On the palate it is dry, acidic, savoury yet full-time, enveloping, voluminous; with a pleasant tactile perception, pervasive, fruity, expansive and with great minerality. Well calibrated and long finish.
Pairings include seafood spaghetti, white meats, fresh cheeses, shellfish, fish soups and fried fish, baked or grilled fish.
How is the wine made?
At the end of the manual harvest in small crates, the selected bunches undergo soft pressing and cryomaceration process for 6 hours.
Vinification: soft pressing, fermentation in steel tanks; ageing in steel tanks for about 8 months.
About the winery
San Salvatore winery is located in the South West part of Campania, in the heart of the Cilento National Park, an ancient land, rich in history and tradition, where, as per belief, Aglianico, Fiano and Greco grapes were brought to by the Ancient Greeks.
San Salvatore is certified organic and is cultivating the land without synthetic products or genetically modified organisms.
The rose that the winery makes – Vetere – is incredibly delicate and pale, which is particularly impressive since it is made from Gaglioppo, one of the most tannic and dark red grapes.
