Recchia Recioto della Valpolicella Classico La Guardia 2019
La Guardia Recioto della Valpolicella DOCG Classico by Recchia winery is a delicious dessert wine at the highest levels of complexity and structure. The very best grapes are laid to rest on reed beds until February. The must is slowly fermented giving it a wonderful aromatic flavour and taste. The wine is briefly left in oak barrels and finishes maturing in bottles. It is excellent at once and can be left for a decade without losing any of its special qualities.
How is the wine made?
The grapes are harvested by hand the first 10 days of October. They are then placed into plastic cases for the natural drying process until they loose the 40-45% of their original weight.
Wine making: de-stemming and soft pressing of the grapes in February fermentation is traditional and takes place in temperature controlled stainless steel tanks at 5-16 C. It lasts for 15-20 days.
Ageing: 2 months in stainless steel tanks, 18 months in French oak barrels
Ageing in bottle: 4 months in bottle

For over a hundred years the Recchia family have been master wine makers. For many generations the family has lived in the heart of Valpolicella in the valley of Negrar.
