Oseleta Zyme 2015
Oseleta Rosso Veronese IGP by Zyme is an interpretation of an indigenous Veneto grape Oseleta. In the glass purple red tending to deep purple wine with garnet highlights as it ages. It expresses pronounced aromatics, fresh, ultra-crisp, and minerality, with forthright fragrances of wild red berry fruit, blueberry, redcurrant, and wild blackberries. With ageing, it takes on pencil lead and earthiness.
On the palate Oseleta enters with seductive richness, then emphatic tannins and acidity make its forcefulness felt immediately; a combination of fruit and earthy mineral convey the powerful richness, and it progresses into a lengthy, well-balanced conclusion.
This Italian red wine is an outstanding partner to fat-rich fish; roasted, grilled, or boiled meat; and medium-aged cheeses.
How is the wine made?
Vinification and maturation:
the quality-selected clusters are de-stemmed and pressed,and the must ferments for about 15 days with ambient yeasts. The wine matures a minimum of 36 months in oak barrels, then an additional year in bottle.
About the winery
The name Zýmē, from Greek, means “yeast.” Yeast is, of course, an indispensable element in the world of oenology, but it also bears symbolic meaning, since it conjures up the concept of naturalness, a fundamental value in Celestino Gaspari’s professional and existential journey, as well as the process of fermenting, understood as a continuous striving towards transformation.

The winery produces highest quality classical Veneto red wines: Valpolicella, Ripasso and Amarone, and also unique blends of 15 different white and red grapes: KAIROS and HARLEQUIN.
