Zýmē Kairos 2020
Kairos in ancient Greek means “opportune, at the right moment.” Kairos is one of the unique blends created by Zyme winery and includes minimum 15 grape varieties, 4 whites and 11 reds: Garganega, Trebbiano Toscano, Sauvignon Blanc, Chardonnay, Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syraz, Teroldego, Croatina, Oseleta, Sangiovese, and Marzemino.
Kairos is luminous, dense ruby red Italian, with garnet highlights as it ages. On the nose, the wine expresses a mosaic of fruit, blossoms, and earthy mineral, alternating with each other.
On the palate, Kairos unfolds an impression of richness and complexity. Fruit, spices, and higher alcohols alternate with fruit marmalade and forest floor, followed by pipe tobacco, cinnamon, nutmeg and clove, combining with a vein of minerality to put on display the tremendous depth of this red wine. It concludes with great length and an appealing note of sweetness.
Ideal food pairings include elaborate dishes of all meats with hearty and spicy sauces. Excellent with aged and full-floor flavoured cheeses and with game.
How is the wine made?
Vinifi cation and maturation: vinification is performed in steel and in concrete vats; cryomaceration and fermentation, with ambient
yeasts, take some 20-25 days, with the sole operation of manually stirring the must and pomace. 8-10 days after drawing-off, the wine goes to French oak barrels, where it passes at least 36 months without any racking. It receives a
further minimum of 1 year in bottle.

The name Zýmē, from Greek, means “yeast.” Yeast is, of course, an indispensable element in the world of oenology, but it also bears symbolic meaning, since it conjures up the concept of naturalness, a fundamental value in Celestino Gaspari’s professional and existential journey, as well as the process of fermenting, understood as a continuous striving towards transformation.
Eco sustainability with respect to vineyard management practices, transparency of the final product through understanding of its production processes, and respect for the rhythms of nature: these are the cardinal principles of Zýmē’s approach to winemaking.
The winery produces highest quality classical Veneto red wines: Valpolicella, Ripasso and Amarone, and also unique blends of 15 different white and red grapes: KAIROS and HARLEQUIN.
