Passito ‘Capitolium’ Moscato di Terracina DOC by Cantina Sant’Andrea is a dessert wine made of 100% indigenous Muscato di Terracina grapes. The sweet wine is bright golden yellow with light amber glints, expressing intense and complex aromas, typical of its variety reminiscent of yellow fruits, apricot, honey, dates and candied fruit. The taste is sweet and delicate, with a good structure, harmonic and very persistent. This dessert wine is excellent to go with desserts, cream cakes, apricot tarts, moreover it goes well also with medium or long ageing cheese, foie gras pâté. Recommended to serve fresh at 10-12°.
Harvest: last decade of September and first of October, selection of the grapes that are left to ripen on the vine. During the harvest grape is placed in small boxes where it rests still it becomes golden yellow colored.
Vinification:
The difficult wine-pressing and removal of grape stalks, due to the withering of the grapes, takes place in a very delicate way and the fermentation starts after a brief cryomaceration. Then the must is moved into small barrel with controlled temperature, where the slow fermentation ends. It rests for 6 months and finally there is the bottling, where the wine rests for 3 months to improve itself before to be sold.

The history of Cantine Sant’Andrea started in the Sicilian island where Andrea I Pandolfo was cultivating the small vineyards of Zibibbo grapes.

Currently the winery grows wine in three main vineyards: the vineyard in Aprilia that they call ‘the heart of production of the farm’; the historical vineyard in Borgo Vodice, and the Vineyard in Terracina, 400 metres above sea level, producing Muscat of Terracina, then Cesanese of Terracina, Aleatico and Abbuoto or Cecubo (this last one was already produced by Romans).

Sant’Andrea also has a special kosher wine range.

    Andrea

    Warm and soft in the mouth with hints of dehydrated apricot and sage. Alcohol present, but elegant and never invasive.

    An excellent passito from Lazio, with an amber color and complex olfactory scents! It goes from dried apricot to notes of honey, dates and even some small hints of vanilla! A balanced soft passito but intended that leaves you with a sweetness on the palate that makes you immediately want to take another glass! A wine made in purity with muscat grapes left to dry for two months and then moved to the oak barrel! Definitely to taste.
