Cabernet Rosso Veneto IGP “60/20/20” by Zyme is an Italian blend of three grapes: Cabernet Sauvignon 60%, Cabernet Franc 20%, Merlot 20%. The wine is red tending to deep purple, and to garnet with ageing; on the nose it expresses wild red berry fruit, blueberry, redcurrant, wild blackberry, musk and spices. On the palate “60/20/20” enters with immediately-appealing richness; is austere, complex, long-lingering, and well-balanced, with pronounced tannins and form structure. It offers aromatic impressions of prune marmalade and wild red berry. Lengthy finish, with delicate hints of black pepper, country herbs, and clay earth. Ideal food pairings include grilled or roasted meat and medium-aged cheeses.

Veneto – Zyme
The name Zýmē, from Greek, means “yeast.” Yeast is, of course, an indispensable element in the world of oenology, but it also bears symbolic meaning, since it conjures up the concept of naturalness, a fundamental value in Celestino Gaspari’s professional and existential journey, as well as the process of fermenting, understood as a continuous striving towards transformation.
Eco sustainability with respect to vineyard management practices, transparency of the final product through understanding of its production processes, and respect for the rhythms of nature: these are the cardinal principles of Zýmē’s approach to winemaking.
The winery produces highest quality classical Veneto red wines: Valpolicella, Ripasso and Amarone, and also unique blends of 15 different white and red grapes: KAIROS and HARLEQUIN.

Fantastic wine. Bought at Z√Ωme’s wine castle / beautiful shop by Lake Garda. Not as powerful and flavorful / spicy as an Amarone … yet dark, powerful and utterly amazing. The wine consists of 60% Carbernet Sauvignon, 20% Carbernet Franc and 20% Merlot … hence the name 60 20 20.
