Cummo – Casa Vinicola Sicania – was created by Diego Maurizio Cummo, who inherited his family winemaking traditions developed under the guidance of his grandfather.
In 2001 Diego bought a farm in the district of Ferlazzano and started producing wine with the characteristics typical of Sicily: colours, structure and fragrance. Today vinification takes place with respect to family traditions together with the use of modern techniques: grapes crushing is made with a soft press to avoid damaging the grapes. Harvesting is done at night when the temperature is around 22/25ºC; fermentation takes place at a controlled temperature by refrigerating in underground tanks in order to keep wine aromas.
The life cycle of the vines and grapes is followed by Maurizio with the help of the winery agronomist to ensure that the grapes are of good quality and have correct parameters of pH, acidity and colour that determine the balance and the structure of the wine.
The vineyards are located in a territory that, thanks to favourable weather conditions (low humidity, proper ventilation and solar heat) ensures the production of genuine grapes of the highest quality.
Cummo cultivates traditional Sicilian grapes and makes classical single grape wines and also very interesting blends: Grillo, Catarrato, Viognier and Chardonnay for the whites, and Nero d’Avola, Nero Cappuccio and a unique blend of 7 grapes ‘Principe Stephan’ – for the red.
