Sogno IGT Lazio Rosso by Cantina Sant’Andrea is a blend of Merlot 85% and indigenous Cesanese 15%. The wine is dark red, sometimes even impenetrable. On the nose the wine is complex and elegant, with the pulp of red fruits, mixed berries, marasca cherry and aromatic notes of vanilla and tobacco. On the palate Sogno is dry, full, with great structure, softly tannic and persistent. This Italian red wine is very good to accompany grilled and roasted meat and game, first courses with meat sauce and ageing cheeses. Suggested to serve at 20-22°C.
Vinification: maceration takes place in specific latest generation wine-maker to obtain the extraction of polyphenols. The duration of the maceration depends on the quality of the grapes anyway it lasts about 20/25 days. During this delicate passage the temperature is around 26/28°C in order to extract polyphenols and anthocyan and to keep fine fragrance. At the end of the fermentation the wine is moved to small steel tanks for three months, in order to start the malolactic fermentation. Then it takes benefit in small oak barrels for 18 months and finally the wine rests for more 6 months in bottle to improve itself before to be sold.

Lazio – Sant’Andrea
The history of Cantine Sant’Andrea started in the Sicilian island where Andrea I Pandolfo was cultivating the small vineyards of Zibibbo grapes.
Currently the winery grows wine in three main vineyards: the vineyard in Aprilia that they call ‘the heart of production of the farm’; the historical vineyard in Borgo Vodice, and the Vineyard in Terracina, 400 metres above sea level, producing Muscat of Terracina, then Cesanese of Terracina, Aleatico and Abbuoto or Cecubo (this last one was already produced by Romans).
Sant’Andrea also has a special kosher wine range.
