Santo Passito Affumicato is a very unusual dessert wine made from grapes that have been slightly smoked.
The method is very unique and involves the following.
Grapes are hung in single bunches for 4/5 mounts in specific room with fireplace that is operated from time to time
The grapes are then pressed in three stages. At the end of the last stag the wine is moved to 112 l demi-barrique to allow oxidation while wine ages for at least 36 months.
The result is a deep golden yellow dessert wine with aromas ranging from honey to ripe fruit, from floral to pleasantly smoked.
Sweet, well-balanced and full bodied on the palate, Santo is great with every kind of sweet pastry, cakes, tarts, and mature cheese. Recommended to be served at 14 degrees.
