Salvetta winery is reviving the antique and unique white grape variety of Trentino – Nosiola – characterized by a late maturation (as for red grapes), finds in the Sarca Valley the characteristics that promote and enhance its distinctive traits: dry soils, limestone and a particular microclimate generated by winds blowing in the area.
Following a deep-rooted tradition, the wine must is left a week in contact with the skins. Nosiola then rests patiently in seasoned acacia barrels until the end of fermentation, remaining on the yeasts until May-June of the following year and finishing his aging in an old Rhenish bottle for at least a year and a half.
The time and the return to the traditional and natural methods of vinification and aging allow this white wine to fully express its own distinctive characteristics, extracting the main aromas of the grape and developing in the barrels and bottle secondary ones.
The result is a structured wine, able to give its best at a temperature of at least 15 degrees.
The Salvetta Nosiola is excellent with starters and fish dishe. However, thanks to its defined structure, it is also recommended with stronger flavoured dishes.

Salvetta

Dario Salvetta acquired the lands in the early 1930´s and started the tradition of wine making, which was supported by his family and his sons Renato, Umberto, Franco and Giancarlo until 2003.

Great love to the vineyard made one of the Salvetta brothers, Giancarlo, come back to the vineyard where he created an organic winery deeply rooted in the land’s history. He adopted ancient wine-growing and wine-processing methods and reintroduced them into the production of a very important white wine of Trentino – Nosiola – and moreover, to the historical Vino Santo Trentino, a dessert-wine which had been produced by the company since the end of 1700’s and exported to all parts of Europe and to Australia.

    That is one of the most unusual wines I tried. Me and my wife always look for something new and decided to try it following a friend’s advice. We found it very impressive how the complex structure keeps the wine so fresh! It seems it is recent vintage and it is 2016. The flavour is very unique too. Great with Spaghetti with Bottarga.

    Salvetta farm in Madruzzo in the heart of Trentino, with an area of about 1.5 hectares. certified organic since the end of 2012. Here an interesting Nosiola is produced on alluvial soil. That rests in acacia barrels until the end of its fermentation, remaining on its yeasts until May-June. Loaded straw yellow color. On the hawthorn nose, memory of dried fruit. In the mouth good freshness, soft and mineral. Good harmony.
